Carrot dip with Doritos® for dipping

Cooking Guide
Peel the carrots and slice them into approximately 1 cm thick rounds.
Peel and chop the ginger.
Peel and chop the garlic.
Heat the sunflower oil in a pot, then add the ginger and garlic.
Sauté for 1 minute, then add the sliced carrots and cashews. Grate some cinnamon from the cinnamon stick over the mixture and use a vegetable peeler to remove the zest from the orange, adding it to the pot.
Stir occasionally and cook on high heat for 6-7 minutes.
Squeeze in the orange juice, add the apple cider vinegar, and season with salt.
Pour in just enough water to cover the carrots.
Make a “lid” from parchment paper and let it simmer on low heat for 20 minutes, or until the carrots soften. If needed, add more liquid.
Once the carrots are soft, transfer them to a tall container and blend into a creamy texture with the olive oil.
Garnish with fresh coriander leaves and black sesame seeds.
Serve with Doritos® Tortilla Chips for dipping.
