  1. Peel the shallot and garlic and chop them finely.

  2. Heat the olive oil in a pan, add the shallot, and saute. Then add the bay leaf and the finely chopped garlic.

  3. Sizzle for 2-3 minutes, add the basil and chopped tomatoes, and cook till the sauce is reduced by half.

  4. In the meantime, prepare the chicken.

  5. Slice the chicken into two thin slices, and season both sides with salt and pepper.

  6. Mix up the parmesan with the breadcrumbs in one dish. Beat the eggs in another dish.

  7. Coat the chicken on both sides in flour, then again in the egg, and finally in the breadcrumb mixture.

  8. Then, drizzle with olive oil.

  9. Cook in the air fryer at 210°C for 15 minutes

  10. Once the chicken is cooked, slice and spread on the tomato sauce

  11. Slice up the mozzarella and place it on the chicken breasts for 10-12 minutes.

  12. Place the Doritos® Tortilla Chips on a plate and then top with the chicken. Garnish with fresh parsley and basil.
