  1. Clean the chicken breasts and slice them into medallions.

  2. Brush with olive oil, season with the grill spice mix, and sear for 3 minutes on each side.

  3. Meanwhile, prepare the sauce: In a bowl, combine the Greek yogurt, and mayonnaise.

  4. Add the lemon zest and juice, then season with salt.

  5. Finely chop all the herbs (parsley, chives, dill, mint) and add them to the bowl, then mix well.

  6. Place the Doritos on a plate, then top with sliced iceberg lettuce, halved cherry tomatoes, sliced cucumber, and then arrange the sliced chicken breast on top and drizzle on the sauce.
