Cooking Guide
Pour the bulgur in a mixing bowl. Boil water and pour over the bulgur and mix. Cover and leave to stand for 15-20 mins.
Warm the tomato puree on medium heat with olive oil, then add paprika paste, paprika flakes, cumin, and a pinch of salt. Mix until you have a blended cream and cook for 3-4 minutes.
Pour the tomato mixture onto the bulgur. Add the pomegranate syrup, lemon juice, and a little more olive oil.
Mix up the mixture till the bulgur is fully integrated into the paste. Place in the fridge to cool, while you chop up all the other ingredients.
Dice the tomato into 0.5 cm chunks.
Slice the spring onion.
Remove the leaves of the parsley and leave them whole. Slice up the stem finely.
Mix the chopped vegetables with the bulgur and season with salt.
