Cooking Guide
Place the pork in a container that can be sealed with a lid and cover with Pepsi.
Leave it to marinate in the fridge overnight.
Remove from the fridge the next day and take the pork out. Dry the meat and then rub it on all sides with the steak spice mix/seasoning.
Line a deep baking pan with baking paper and then add the pork.
Peel the red onion, garlic, carrot, and parsley root, and cut into larger chunks, and add them next to the meat in the baking pan.
Slice the chili in half, peel the lemon, and add the lemon peel together with the chili in the baking dish. The lemon juice is then squeezed over the meat.
Under the meat, pour on around a 2-finger depth of Pepsi®.
Cover with aluminium foil and cook in the oven at 160°C for 2 hours, then turn and cook for another 2 hours.
Then remove the aluminium foil and baste with the now thickened juices on the bottom.
On the grill setting, cook for another 10 minutes, then turn, and continue for another 10 minutes on the grill setting.
Then leave to cool slightly. When it’s not too hot to handle, put on rubber gloves, shred the pork in the baking pan, and mix with the remaining juices.
Lay out the Doritos® Tortilla Chips on a plate, and then top with the pulled pork and garnish with fresh coriander.
