Cooking Guide
Prepare the chickpeas: Mix the chickpeas with the spices. Drizzle with olive oil, then bake in a preheated oven at 220°C (428°F) for 20 minutes.
Make the cheese sauce: While the chickpeas are roasting, prepare the homemade cheese sauce. Mix the plant-based milk with one tablespoon of cornstarch and heat over medium heat. Once thickened, add the diced cheese, harissa paste. Stir until smooth.
Prepare the tomato salsa: Dice the tomatoes, then mix them with harissa paste and finely chopped red onion. Drizzle with olive oil and lemon juice, then mix them together well.
Assemble the dish: When the chickpeas are done, remove them from the oven and let it cool.
Place the Doritos® Sweet Chili on a serving plate.
Drizzle with the cheddar cheese sauce.
Add the tomato salsa.
Sprinkle with roasted chickpeas, chopped black olives, diced red onion, and sliced jalapeños.
Drizzle again with cheese sauce, and garnish with coarsely chopped fresh cilantro.
