Cooking Guide
Peel the red onion and the garlic clove and dice them up.
Heat the oil in a pan, add the bay leaf, allspice, chili, and black peppercorns.
Saute for one minute, and then add the diced onion and garlic.
Sizzle on a high heat for 3-4 minutes, add salt, and then the curry spice mix.
Continue to saute for another minute, then add the coconut milk.
Peel the carrot and then slice into thin strips (around 0.5 cm in thickness).
Add the broccoli and cauliflower florets to the pan.
Cut the bell peppers into thin strips and then cook them together for 2 minutes
Lay out the Doritos® on a plate, sprinkle on some grated cheese, and spoon on the hot curry.
Garnish with fresh coriander leaves.
