  1. Melt the coconut oil in a saucepan.

  2. Add the dates, cinnamon, and the scraped seeds from the vanilla pod. Cook until the dates break down into a paste.

  3. While the dates are cooking, peel the bananas and mash them in a large bowl.

  4. Chop the almonds.

  5. Once the date mixture is ready, combine it with the mashed bananas, oats, sunflower seeds, and chopped almonds in the bowl. Mix well.

  6. Spread the mixture evenly into a baking tray lined with parchment paper.

  7. Bake at 180°C (350°F) for 25 minutes.
